Chicken Chia & Veggie Patties - Dairy, Egg, Nut free - our 3yo Miss J loves these patties, at her last sitting she devoured 1½ patties, and was still asking for more!
Serves: 12
  • 500g chicken mince
  • 1 large zucchini, grated
  • 1 large carrot, grated
  • 1 onion, finely diced
  • 2 teaspoons garlic, crushed
  • 1 cup crumbs - I used Orgran Corn Crumbs
  • 1 cup grated cheese - I used My Life BioCheese (Dairy Free)
  • 2 tablespoons oil - I used Ricebran Oil
  • 2 tablespoons herbs - I used dried Italian Herbs
  • 1 tablespoon of Chia seeds, soaked in 3 tablespoons of water - I use Nature First Organic Chia Seeds
  • salt & pepper to taste
  • extra crumbs to coat the patties - I used Panko breadcrumbs
  1. Preheat oven to 180c
  2. Squeeze grated zucchini & carrot to remove excess liquid
  3. Place zucchini & carrot in bowl with chicken, onion, garlic, crumbs, cheese, oil, herbs
  4. Mix well with a fork
  5. Add Chia gel to bowl, mix well again with fork until gel is dispersed throughout the mince
  6. Shape mix into patties, mine were approx. palm size
  7. Place extra crumbs in bowl/plate
  8. Press patties into crumbs, flip over gently to cover both sides
  9. Fry on medium heat until golden on both sides, then place into oven on a baking tray for approx. 30 mins, turning after 15 mins
